nantar mothya bhandyat mirchi chi phodni (mohri, jeera, mirchi, kadhipatta ani hinga) karoon tyawar kanda partaycha.. hawa asel tar tomato hi ghalaycha thodasa (optional).. mag tyat thode frozen peas (mataar) ghalayche..

microwave madhe hi vangi mast hotat..to authentic..karpalyacha vaas yennar nahi.. punn vangi bhajlya nanter gas saaf karayche ek kaam kami hote!!

ekda bahjun jhale ki saal kadhun tyala mash karayche.lasuna sakkat...

i tried roasting the vaangi in the oven using the method described above ... but inspite of several attempts - never quite got the "roastedness" i wanted.

finally - i switched to "broil" - about 425F, for about 50 minutes. just place the eggplant on Al foil (this will hold all the oil that oozes out). just turn it 2-3 times. the effect was unbelievable ... the skin just comes off as if the eggplant was molting!! just drain off the oil ...

the roasted effect cannot be distinguished from roasting on a real gas stove - and no mess to clean up either!!
