Here is the recipe of Egg pie - (with Indian spices ) 1 Egg per person, 1/2 onion per person (medium size), 1/2 tomato per person (medium size) Salt, Red chilli powder, Garam masala or Goda masala, Oil around 1 teaspoon per person(or less), Cumin seeds, turmeric powder, Cilantro (coriander leaves) Slice onions length wise. Cut tomato as usual in cubes. Now start heating oil,add Cumin seeds, turmeric powder, little bit of cut cilantro. Now add cut onion and start sauteing, when onions become translucent add cut tomatoes and increase heat and saute it, let the most of the water evaporate. Add Chilli powder, masala, salt in it and saute it for few more minutes. Now lower the flame as low as possible. level out the mixture in the vessle. /**** Start cracking the egss 1 at a time. Pour the egg on the masala mixture. you can crack the yolk if you want it thoroughly cooked. with use of fork try to get the egg till the bottom of the vessel without disturbing the level. Repeat this for all the eggs but act fast. Sprinkle little salt, chilli powder and masala on the top. Sprinkle Coriander leaves. Now take the little water in a plate and cover the vessel with this plate. Eggs will start cooking. Now increase the flame to medium. Let the eggs cook as per your taste. ****/ Part between /**** and ****/ can be done in an oven but I never did that. You are welcome to post your findings in here. You can have it with just bread and then it will be a meal under 30 minutes. I have stopped eating eggs long time back but I still remember this recipe. This actually can be done as a side dish for a party.
