any suggestions for vegetarian filling options to make puffed pastries? if there is already a BB, can someone give the link ... thanks

Abe, I simply love making stuffing for puffed pastries. You can cater to different crowds with few variations. here are few of my favorites.

1. Boiled potato:

a. saute onion add peas, ginger, garlic, paprika, turmric, corriander powder and finally potetoes.

b. add generous amount cumin to ghee. add green chillies, kadhi patta and potatoes.

c. Sauté frozen corn, capscicum in butter and garlic. Add pepper and potatoes. While stuffing, add your favorite cheese - shreaded to this mixture (1:4). I use cheddar cheese.

2. 1 16 oz. pk of frozen palak and add 32 oz. ricotta cheese. add onion, garlic, ginger, green chillies, garam masala. saute it till all the water from cheese and palak is dried. finally while stuffing, add your favorite cheese and this mixture(1:4). I use mozzarella chesse.

3. chop paneer into tiny pieces. take yogurt add ginger, garlic, jeera and dhania powder, tandoori masala (can also use pathak’s tandoori masala). Marinate paneer in this mixture for 2-3 hours. Add butter to a skillet and stir the paneer mixture till all yogurt is dried.

4. take Bocca or morninstar gardenburger. Thaw it completely and chop it finelly in food processor. (you may even find meatless beef or something).. saute it with onion ginger, garlic, tomatoes, chicken masala.

5. make matar usal. i usually make a paste of coconut, green chillies, kothimbir, ginger. saute this paste, add matar, garam masala, dhane pood. once cooked, u can use it as a stuffing or u can mash it with 'pav bhaji or mashed potato masher' and add little bit of besan and cook it till its dry. it should NOT form a lump. can add some lemon juice if you like.

Add salt to taste in all the above.
