Paneer 400 gms.
Dahi 1 cup
kothimbir 1 judi
pudina 1 judi
hirwi mirchi 4
limbacha ras 1 tbsp.
lasun 3-4 paklya
Garam masala ardha tsp.
Chaat masala 1 tsp.
Oil 1 tbsp.
Salt to taste

paneer che thode mothe tukde karne.
kothimbir, pudiana, mircha chirun ghene aani tyat dahi, meeth, chat masala, garam masala aani limbacha ras ghalun mixer madhun thode firwun ghene.
he mishran telat ghalun ekatra karun ghene.
paneer che tukde tyat gholwawe aani ardha paun taas marinate karawe.
oven madhe high temp. war cook karawe.

Mala kaalch mazya eka U.P. chya maitrinine paneer kase banvayche sangitale ahe.
Ata hi parmparik ani trasachi paddht ahe ki soppi he mala mahit nahi. Pan khali kruti det ahe:


1 gallon milk boil karayche.
Tya madhe sadhran 1/2 cup vinegar ghalayche.
Ani mag thoda vel low gas var thevayche.Tyala jaast halvayche vagere nahi.

Halu halu milk var paneer float hou lagte.
Eka chaaLni var phadke takun tyaat te paneer kadhun ghyayche.

Ani ghatta pilun, phadke ghatta bandhun thevayche. Tyaavar kahitar heavy vastu thevaychi.

Sadhran 2 hours madhe tyatle sagle paNi jaun, jast hard nahi ani khup soft hi nahi ase paneer tayar hote.

(Mi he karun baghitlele nahi.Keval aikle ahe. ;-))

Quick Paneer recipe:

"Ricotta cheese" ghya (~14-16 oz, fat-free pan chalel). Chavi sathi thode meeth taka. Ekhadya baskya bhandyat (pie - utensil works best) 1/2 inch layer karun, oven madhe 350 C var 20-25 minute theva. Thand zhalyavar vadya kapun aavadtya bhajit taka (palak paneer, matar paneer etc.)

mi ekda ghari paneer karoon baghitale hote pan tya paneer madhoon mala purna pani kadhata nahi aale..mi 2/3 hours tya var vajan pan thevale hote pan tari pan tyatale pani purnapane nighale nahi..aani te oochalale tevha tootoon gele...ghari paneer kele tar te ghatta vhayala aani tyache vadya padatil asa honyasathi kaay karayacha?
