MrsBarve, Ricotaa cheese pasun khup chaan ani patkan rasmalai banvata yete.

Grocery store chya Curd/chees section madhun fat free ricotta cheese cha yellow color cha container anaycha.

Add some sugar to it.
Beat the mixture till it becomes smooth (there should be no lumps)

Spread the mixture and bake in the oven at 300-350F till the knife inserted in it comes out clean.(around 30 minutes)

Then cut the small cubes.

Basundi madhe te cubes sodayche. Agdi rasmali chi taste yete.

Try it.

Mrs Barve mi Ekjan ne diley tashi ricotta cheese chi rasmalai karate. kharach khup chan hote.mi khali detail recepee detey. karun bagha.
rasmalai
32 oz ricotta cheese.
1 cup sugar

ras(liquid)
16 oz half & half
1 small carton heavy cream
1/2 cup sugar
5 cardamon
1 tbsp finely shreded pistacios nuts or almonds(optional)
Mix ricotta cheese and 1 cup sugar in baking dish. Make into a paste with fork. bake in 350 F oven for 35 minutes. let it cool. then cut into square pieces.
In separate pan mix half & half, cream and sugar. Boil on low heat until it reduces to 2/3. Ground cardamon seeds and add to liquid. Cook for few more minutes. Remove from heat and set aside.
Pour this ras on cubes and refrigerate. When chilled, add shreded nuts.

var dilelya mapat 10-12 lokanna purel evadhi rasmalai hote.

Here is one more recipe of Rasmalaai but with eggs
 INGREDIENTS -1cup full cream milk powder,1 egg ,1/2 tea spoon baking powder1 lit. milk, around 450 gms sweetened condensed milk, around 400 ml evaporated milk.
First boil the milk to bring it to 3/4,add condensed milk and evaporated milk. Stir well ,allow it to boil on low temp.
Now beat the egg, add 1/2 tea spoon baking powder, mix it and add milk powder. Mix thoroughly. make small balls or any shape you want, place them in boiling milk with 2 to 3 minutes gap. Allow them to boil in milk for sometime. (15 to 20 minutes,these balls swell in milk). Take one out of the milk to check. Cut it with spoon, it should get cut smoothly , it should not be hard in the center. Accordingly decide the boiling time. After done, cool it, add rose or kewara essence, decorate with pistachios.
Imp tip : Use flat utensil to boil the milk. Softness of the rasmalaai very much depends upon baking powder you use. Anyway this recipe is of 'trial and error' category and requires lot of patience.

Rasagullyachi recipe

4 cup (measuring cupne) dudh(whole milk) boil kara. tyat white vineger takun dudh nasava(limbacha raas hi vaparata yeil pan tyacha vaas yeto mhane). te patal fadakyat gheun changale pilun kadha(yogurt strainer vaparale tari chalel.pan mag hatane dabun pani kadhave lagel) mhanaje excess water nighun jail.
nantar ek plate madhe he paneer gheun tyat 1 tb spoon rava taka, velachi crush karun taka, powder peksha crush keleli havi. mag talhatachya panjyane pressure deun te mishran changale ekjeev kara. (creamy consistency) sadharan 10 te 12 minta lagatil he karayala.
pressure pan madhe 1 vati sakhares 3 vatya pani ase praman gheun he mishran gas var ukalun ghya. te ukalat astana paneerche chote chote gole tayar kara(rasagullyachi ji size havi asel tyachya 3/4 akarache gole banava. 4 vadi dudhat 20 rasagulle hotat. he gole banavat astana tyavar cracks asnar nahit hyachi kalaji ghya mhanaje rasagulla futanar nahit) to paryant pak ukalet. tya pakat rasagulla taka. pressure pan che lid band kara(with shitti). gas mediumvar theun jemha pressure buid up hoil temha shitti honyachya just adhi gas band kara.

rasagulle gaar zale ki band dabbyat kadun fridge madhe theva. hya pudhil kruti kiran la vichara:)

Readymade rasgulle ookalanyaaraa panyat (thodi saakhar pan) sodayache aani sadgaranpane 3-4 mins jhakan thevun vafavaayache. baher kadhun haataane daabun chapate karayache.

ekikade half and half aani condensed milk microwave madhye 50% power var 5-10 mins firavayacha. sadharana ookali yetey asa vatala kee baher kadhayacha. tyat he rasgulle takayache aani varun keshar aani dry fruits. 15 mintat rasmalai. masta gare gaar karun khayachi.

Me pan rasamalai scratch pasun karate. pan maza anubhav ahe ki whole milk peksha 2% milk che panir jast changale hote. kiti khara ahe te mahiti nahi pan mazi aaji sangayachi ki rasamalai karatana dudha madhe malai/fats nasavyat..mhanun gaii che dudh vaparatat india madhe rasamalai banavalaya. thanks moodi, next time me nakki mixer madhu kadhen.pan mala ek prashna aahe ki tu rasmalai or rasgulle yache paneer banavatanna te tangun thevate ka?? i would like to know more about it in detail. .. i mean bhajya sathi laganare panner and rasgullache paneer tayar karanyat difference aahe ka??

मी काल प्रथमच रसमलाई केली, अगदी विकतच्या सारखी.
एक लिटर दुधाचे (3.5 %) पनीर करुन घेतले. आणी एक लिटर दुधाची रबडी बनवली.
पनीर करुन एका पातळ कापडात बांधुन त्यावर पाण्याने भरलेले भांडे ठेवले. २ तासाने पनीर काढुन ते मिक्सरमध्ये साधारण १० मिनिट फिरवले. चांगल्या प्रकारे मऊ झाल्याची खात्रि करुन घेतली. पनीर मिक्सरमध्ये फिरवे पर्यंत पाऊण कप्(कॉफीचा) साखर आणि साधारण तिन कप पाणी हे गॅस वर उकळायला ठेवले होते.
पनीर मिक्सर मधुन काढुन पुन्हा हाताने जरासे मळुन एकजीव करुन घेतले. व त्याचे साधारण मध्यम आकाराचे गोळे केले. त्या गोळ्यांना चिरा पडणार नाहित ह्याची काळजी घेतली.
साखरेच्या पाण्याखालचा गॅस कमी आचेवर ठेवुन त्यात हे गोळे टाकले झाकण ठेवुन उकळु दिले. पुढचे पाच मिनिट गॅस प्रखर आचेवर ठेवला. पुन्हा ५ मि. कमी आचेवर पुन्हा ५ मि. प्रखर आचेवर असे साधारण तिन चारदा केले व गॅस बंद केला.
साधारण तासाभराने पाणी थंड झाल्यावर हे पनीरचे गोळे हलकेसे दाबुन रबडीमध्ये टाकले.
थोड्या वेळाने ते एका डब्यात काढुन फ्रिजमध्ये ठेवुन दिले. अर्थात त्यातले काही त्यावेळिच फस्त झाले हे सांगणे न लगे.
विशेष म्हणजे विरघळले नाहित, छानपैकी मुरले सुद्धा.

मग या पाहु आज माझ्याकडे रसमलाई खायला.

हे गोळे ऊकळताना, साखरेचा पाक जास्त दाट होवु देऊ नये. याकरता अधुन मधुन थोडे थंड पाणी टाकत रहावे. पाण्याची एकुण मात्रा कायम राखावी.

psg एकदा असेच विकतच्या रसगुल्ल्या चा पाक उरला होता तर मी त्यात परत थोडी साखर आणि पाणी टाकुन त्याचा निट पाक बनवला.
त्या मधे बसेल ऐवढा मैदा, साखर आणि मोहन घालुन निट मळुन छोट्या छोट्या पुर्‍या केल्या आणि त्या तळल्या.
खुप सुंदर लागत होत्या
